15 oz Yellow Corn (drained)
15 oz Black Beans (drained and rinsed)
10 oz RoTel (drained)
8 oz Cream Cheese (softened & diced)
1 t Chili Powder
1⁄2 t Garlic Powder
1⁄2 t Cumin
1 pn Cayenne Pepper (ground)
1 c Shredded Mexican Cheese (divided)
Instructions
- Preheat oven to 350 degrees.
- In a medium sized bowl, add the corn, black beans, rotel, cream cheese, chili powder, garlic powder, cumin, cayenne, & 1/2 cup shredded cheese. Stir together to incorporate.
- Pour into a 2 quart baking dish and spread evenly. Top with remaining 1/2 cup shredded cheese.
- Bake for approximately 25 to 30 minutes, until cheese has melted and mixture is bubbly.
Notes
Can substitute Whipped Cream Cheese, same amount.
